We’d go back there to eat despite some oddities. We probably would have eaten there several nights during our trip except for their odd waitlist process. It must have sounded like a great idea on paper and would probably work if the restaurant is located where there’s a large village like Whistler. But Canyon Village is so tiny. There wasn’t anything to do to occupy our time except to sit/stand there and be bored. I don’t understand why they don’t just pass out concrete reservations. Luckily, the general manager is good natured and humored us in between slicing meat.
Once seated, the service was friendly and attentive despite how busy they were.
So, even though the most authentic dish of our entire meal is probably just the boiled edamame, the food was flavorful and good enough for what it’s meant to do on a cold winter night — so we didn’t care too much. They ran out of the traditional broth so we all had tonkatsu broth. We ordered several different cuts of meat and shrimp. They get 5 stars for freshness of ingredients (so key to good shabu shabu). The meats were very high quality, and the shrimps were sweet and practically sashimi grade. The freshness of all the ingredients were impressive. I’d definitely order more shrimp in the future.
I can’t give it 5 stars because of some random weirdness. The tonkatsu broth is delicious as it first arrived to the table. But as it boiled (and the customer has no easy control over the intensity of the heat,) the soup became progressively too salty to the point of being undrinkable. And because they served carrots in these random semi-peeled large chunks, our carrots didn’t cook through before the soup level is too low. Traditional shabu shabu places would come and fill the bowl with liquid as it evaporates. Since that didn’t happen here, we just poured ice water into our soups — and it’s fine. First of all, I am a vegetarian and I asked for the vegetarian option since they gave me the option on the menu to make it vegetarian. And the manager who attended me in this case, I think it was Austin or I don't remember his name, began to say that it was not delicious, that it had no nutrients and that I should order something else and he showed me the most expensive option. I reiterated to him that I am a vegetarian and that I would like to eat that regardless of whether he thinks it has no nutrients or not. There was no problem with that, he proceeded to order the dish and I was left waiting at the table. The problem was when one of their employees was sitting and eating lunch there at the waiter's water station in front of me, and then he picks his teeth in an unhygienic way and looks at me as if nothing happened, which I found super unpleasant that he does that in a restaurant since it goes against the hygiene in the restaurant. I, very uncomfortable, kindly commented to the manager [1:55 p.m., 2/7/2025] ev: That one of their employees was picking and cleaning his teeth in an area where they serve food and that I found that very disgusting and the manager's response was this "I think he is doing it right, it doesn't bother me, it's better to get out of my restaurant because I'm not going to serve you food" and he spoke to me in such a bad way, with little empathy and selfish. As if it were my fault and I was just a customer wanting to eat something. Not satisfied he tells me "Do you speak Spanish?" as if that were a problem. I would never go back to that restaurant again, they treat customers poorly and they don't take care of the hygiene of the restaurant and they allow employees to clean their teeth in front of you. We had an experience on 12/6/23 that we want to address. We love Kuchu Shabu and have always had a wonderful time eating there. I will first talk about the two awful ladies that left incorrect reviews and then talk about our awesome dining experience. This was our third time dining at Kuchu Shabu and the bartender has served us every time. He has always been fun and personable. The two ladies that wrote reviews treated the staff horribly and made other people at the bar uncomfortable. The two ladies were condescending and rude from the beginning and it eventually turned into aggressive and abusive language to all the staff. We heard everything and the staff did nothing to warrant such behavior. The two women left out major details about their demeaning and verbally abusive behavior that eventually led to them being asked to leave. After about 30 minutes of them being awful to the staff and the people around them I was about to say something but the bartender stopped them before it went further. The bartender did the right thing by kicking the women out and kept it professional.
Everyone at the bar thanked the bartender for kicking the ladies out. They were ruining the experience for everyone. We're sorry there are people out there that treat people that way and we wanted to show our support to the restaurant. My partner got the Tonkotsu ramen, which is his favorite ramen in the world. They also had a new spicy Thai chicken dish that I absolutely loved (and I normally can't do a whole dish spicy, but every last bit was eaten by me!)
