If you are looking for a truly unique and special restaurant in Las Vegas, ITO is the place. We have been twice over an almost exactly 1 year span. Both times the food, service, view and experience have been exceptional.
The restaurant is located on the top floor of Fountainbleu with expansive panoramic views of Las Vegas, the mountains, and The Strat. The restaurant is located through the exclusive private club called the Poodle Club that is pretty cool to get a "behind the scenes" look at it as you are escorted to the restaurant off the back of the club.
You are able to join the restaurant 30 minutes ahead of time, and I would highly recommend as they have their own private bar featuring some amazing Japanese whiskies and sake.
The bartenders are extremely friendly, knowledgeable and happy to walk you through any of the whiskies, wines, sake or cocktails.
The entire dining experience is only 12 people with a number of sushi chefs preparing the dishes and explaining each of the 19 courses at length. The wait staff for drinks and other items could not be more attentive. Many delicious courses include Otoro, Wagyu and Uni that are often the most decadent nigiri sushi.
I have seen some of the other reviews and unsure how they have come to their conclusions or experience as everything has been exceptional both times we have been including a super attentive staff. In addition, both times, there was a group of really die hard fans that had been multiple times and fun to speak with them and their love of Ito as well.
Overall, part of what you are paying for is the intimate setting and view in addition to the stellar food. In a city filled with “Bigger, Bold, and Over The Top,” Ito swings in the complete opposite direction and delivers a really great culinary evening.
Well worth the trip if you are looking for a unique and special Omakase experience in Vegas. We plan to make this an annual visit at least once a year...

We were staying in the Fountainebleau hotel anyways and figured I'd make a reservation to start off the weekend right. We arrived a little early and were offered a cocktail before seating. The cocktail/waiting area was a speakeasy-ish room near/next to the rooftop bar called the Poodle Room. Once we were escorted in to be seated, I felt like I walked into a James Bond Villain's lair or conference room. It was a semicircular room with an incredible view of the strip (including the sphere) with the sushi chefs facing you as they diligently prepped the first course. The Bad: Service from the front line. From the busboy to the waiter to the floor management. The service was straight trash for a luxury 5-star hotel offering a high-end omakase. From complaining about serving hot tea from the waiter Ace, to crowning the table incorrectly, to not serving us welcome drinks, to treating my girlfriend and I birthday as a felon when I voluntarily offered to grab proper ID and payment for the dinner. Service was straight trash. And the customers are mainly player card holders of Fontainebleau with lowest tier status. Heavily perfumed couples ordering a cocktail during the omakase is the main vibe of this establishment.
Otherwise the food and chefs are amazing. And the view is great. But the service kills the reputation...
