I don't know if Koibito is a franchise or not, but I've been to two other Koibitos and they were so much better than this location. Normally, if I ask for a special roll, any other sushi place I've ever been to has no problem making it. They had a shrimp & veggie tempura roll. I asked nicely if I could get it with just veggies and no shrimp. The server very rudely said no before I even finished my sentence. Even if he had said, "Sorry, we can't do that." I would have understood, but just a gruff NO was really off putting. Not only that, but we waited an HOUR for cucumber rolls. Basically the simplest thing you could order. No apologies for the wait or anything. Just tossed our food in front of us, and that was it. I will stick with the Koibito in Olympia. They are extremely friendly there, and will make whatever you want with no problem. Even when it's been busy there, they've been super nice about it, and always say goodbye and thank you...

Koibito's offerings are as simple as the place looks. We normally order the chicken teriyaki. It's perfect for sharing. I'd suggest it for an adult and one child. Our lunch usually includes a salad which is always perfectly crisp + dressing on the side. My husband and I typically order the rolls. The best offerings are the specialty rolls: spicy tuna, shrimp tempura, unagi, and crunch roll. My husband likes the homey quality of the fried rice, as well. The items are very well packaged, as we often order lunch to go, and the service is excellent. The reception is always warm and the owners are very generous. This business seems now to only be open on weekdays serving the SoLkUnion tech crowd. Their website is incorrect in the posted hours. Do not trust everything you read on the Internet. Their non-open hours are their loss as they were not able to experience my gratitude and thereby platitudes. Their loss. Do not be fooled, if they are not open how is one able to experience their food and service to be able to write a review? Do not go.... Addendum, 22 March 2025: It seems that Google, or the community, has corrected the opening hours of this venue. 11:00 to 21:00 weekdays only. Pretty cozy place for dinner! I ordered the chicken teriyaki + gyoza by phone and it was ready in 10 minutes! The lady at the register was extremely friendly. The teriyaki sauce over the chicken is a little too sweet and does get poured over half of the portion of rice, making that really sweet as well. I appreciated that the gyoza came with vinegar, that's awesome! The portion size is also slightly larger so you can have a meal + a snack. I spent just under $20 for the dinner including tip. There's mayo in the salad dressing and they were able to remove it for me. Thanks!

This place is so adorable and cozy. I really enjoyed the food here and there was a worker there named Hannah who was very nice and sweet. It’s a humble place, I liked the way it felt and their food was indescribably good to me. I have a very bad stomach issues and I was able to eat this all with no problem, it set very nicely and I feel actually good and fresh after eating for once instead of being in pain. I think it is my favorite place in Seattle, I am traveling and that was my favorite place that I stopped. I recommend their poke bowls!!

Did a dinner order to go. We had beef fried rice and chicken teriyaki. Both the dishes were pretty good and the portion size was decent. The quantity of protein in the teriyaki was pretty nice and between the two I really liked the beef fried rice more. It was at closing time when we went so the place was empty and they served the food pantry quickly.
