Trio was the best restaurant during our road trip from Arizona to Wyoming. The food is not experimental, but simply classic flavors done right. For appetizers we had the blue cheese waffle fries and BLT soup. The soup had a fresh tomato flavor and was good, but those fries wow! The fries were crispy outside but soft on the inside and the cheese sauce needs a soppin’ biscuit. Creamy and not overpowering on the blue cheese, just the right mix. Cocktails were the Martinez and the 1999, both were tasty.
Our main courses included the pork chop and the risotto with shrimp. The risotto was good, but not great due to it being a little pasty rather than creamy. It came with an add-on option of shrimp or steak. I definitely would go with the shrimp as it had a noticeable lemon flavor which pairs better with the shrimp. This is my only negative of the meal. I know you always run the risk ordering the pork chop but I am glad I stepped out on that ledge. It was tomahawk style bone in and cooked to medium leaving it juicy. Paired with the creamed corn gave it the right amount of sweetness that goes well with pork. I recommend pairing it with their brown ale Mighty Bison, it added the right amount of nuttiness.
We finished off with the s’mores baked dessert in a cast iron pan. It was kind of like a graham cracker and fudge brownie cake topped with toasted marshmallow. Delicious!
